Super Simple Breakfast Burrito

This was so good, so easy, and worth it. Try it out.


2 eggs

2 small, or 1 large, sausage patty

mozzarella cheese

sauce of choice

flour tortilla

To Make:

Start your sausage cooking in a frying pan on medium high heat. I had 2 small beyond sausage patties in the freezer so I used those, but feel free to use whatever kind you like. While the sausage is cooking, crack and scramble 2 eggs. When the sausage is done, cut the patties in half and lay them about 1/3 of the way away from an edge of your tortilla. Leave some space around all the sausage so you can fold the tortilla correctly. Next make your eggs to your preferred doneness. I actually prefer my eggs to be a little more on the overdone side, but it’s your preference. Lay the eggs on top of, or to the smaller side, of the sausage. Pour some sauce over the eggs and sausage. You can use hot sauce, salsa, etc. I had Taco Bell Baja sauce in the fridge so I used that. Next sprinkle, or dump, some mozzarella cheese on top of everything. I only sprinkled, but measure with your heart. Wrap your burrito however you want. I folded in the edges, then rolled it, but you do you. Now here’s the important part, lay your burrito seam side down in your still hot frying pan. Let it sit for about a minute, then flip it. Serve it to go wrapped in some foil, or on a plate with some extra salsa on the side. Enjoy!


Since it’s Saturday, when I’m writing this, I decided to sleep in a little before I went to the gym and did my Saturday routine. I was hungry when I woke up, and searched my fridge and decided on a breakfast burrito, even though I’m typically not a fan. Boy was this good though, and super quick to make. I’ll have to make sure I make it again. There’s not much new going on in my life, so I find it harder and harder to come up with a story to tell with each recipe. You come here for the recipe though, so I‘m not mad if you don’t read my ramblings. Hopefully everyone is having a great summer and gearing up for school to start again. Enjoy the last few weeks of freedom, or torture depending on how you look at it!
