Parmesan Crust Cod and Roasted Potatoes

Tonight for dinner we're gettin a little fancy.

You'll need:

Cod filets, we used 2 but use what you need for your family

flour

panko bread crumbs

Parmesan cheese

egg

red or gold potatoes, I used gold

oil of your choice

spices, use your favorites






For the Potatoes:

Preheat your oven to 400 degrees. Dice your potatoes into bite sized pieces and put into a bowl big enough to hold them. Season with your favorite seasonings; I used garlic powder, onion powder, and smoked paprika. Add in some oil of your preference; you don't need that much here, just enough to lightly coat your potatoes. To roast I used this basket thing that I picked up at Walmart and roast them for about 15-20 minutes. You'll add the fish at this point and finish cooking the potatoes with the fish.


For the cod:

Whisk egg in a container that will hold your filet. Pour about 1/2 - 1 cup of flour of your choice, I always use whole wheat, into a separate container. Combine about 1/2 - 1 cup panko breadcrumbs, Parmesan cheese, and some spices in a third container. The spices I used were garlic powder, onion powder, smoked paprika, and a bit of cumin. Dip your filets first in the flour, then egg, then coat in the panko and cheese. Place on a parchment paper lined pan and cook until the internal temperature reaches at least 145 degrees. This took about x minutes for ours.


Serve with a vegetable of your choice, I had broccoli so I used that.


Story:

I don't really have a story for today, but does anyone else get annoyed when you're watching a series on Netflix and you think you've hit the last season only to find out that a different streaming service carries the other seasons? That happened to me this week when I thought I hit the last episode of Criminal Minds, only to find out there were 3 more seasons on Hulu that I hadn't seen. Luckily I have both steaming services, so it wasn't a big deal and I just moved my happy self over to the other one, but still, I would have been thoroughly annoyed if I didn't. Also, am I the only one that 'saves' final seasons to watch for when you feel less anxious or for whatever reason? I HATE when one of my favorite shows ends, and I had been 'saving' that 'last' season of Criminal Minds to watch later and I got so frustrated that I had been saving it for several years only to realize that there were more seasons.
