One Pot Spinach Artichoke Pasta

This was super easy, super yummy, and took about 20 minutes total. Enjoy!


pasta, I used barilla protein pasta

1 1/2 cups milk, I used skim

1 1/2 cups chicken broth

2 tbsp butter

garlic cloves (as many as you’d like, i used 3)

jar of artichoke hearts

few handfuls of spinach

parmesan cheese

asiago cheese (optional)


To Make:

In a Dutch over on the stove, melt some butter and toss in your diced garlic cloves. Cook until fragrant and pour in the chicken broth and milk. Put in your pasta and be sure that it’s fully covered by the liquid. Throw the lid on your pot and let it simmer until the pasta is cooked to your liking. While the pasta is cooking, dice up your artichoke hearts into bite sized pieces. When the pasta is done, stir in the artichoke hearts and a few handfuls of spinach. Let the spinach wilt and mix it in. Sprinkle (or dump, which ever you like best) in some red pepper flakes and freshly cracked black pepper. Mix in some Asiago cheese and Parmesan cheese to taste. Serve with some lightly breaded chicken and garlic bread.
