Kielbasa Potato Casserole

Here's one of our favorite quick and easy casserole dishes!


1lb Kielbasa

32oz diced potatoes, thawed

1 can cheddar cheese soup

5oz evaporated milk

cheddar cheese


To Make:

Preheat your oven to 400 degrees. While the oven is preheating, cut your kielbasa into bite size pieces and put them into a bowl. Pour your thawed potatoes, we use the Kroger brand southern style hash brown variety which is just little diced potatoes, into the same bowl. Next mix in the cheddar cheese soup, evaporated milk, and however much shredded cheddar cheese as you want. Season with your preferred seasonings; we use garlic powder, onion powder, smoked paprika and T will put some salt on his when it's done. Sprinkle some additional cheese on top and cook for about 25-30 minutes or until the cheese on top is done to your liking, we like ours to be a little brown and crispy so it takes a little longer.


It's Sunday, so I'm trying to get some meal prepping for the week completed and just make sure that all of my errands and cleaning are completed before I have to go to work for the week. T and I love to try new things, so there hasn't been many dishes that we've repeated, and this is one that we've made a few times. It's super quick to throw together, tastes amazing, and ends up making a ton. Since it's just the two of us, we've figured out to half the recipe and it makes 3-4 servings which is perfect for us. This is also one of those foods that tastes equally as good when reheated, which is important to me because I'm not typically the type of person to eat a ton of leftovers. I like to make half of this recipe and take it to work for lunch, it's so good and super filling. Enjoy!
