This is another recipe from nutritionalsarah on TikTok, but it tasted like a copycat version of Olive Garden's zuppa toscana. Enjoy!
1 lb Italian sausage, I used mild
1 yellow onion
4 gold potatoes
5 cups chicken broth
3/4 cup half and half
2 cup kale
parmesan cheese to top if you want
Turn on sauté mode for your instant pot and brown your Italian sausage. Add your onion and garlic and cook for about a minute. Add the potatoes and chicken broth. Cook on manual pressure for 10 minutes. After the timer goes off release the pressure manually. Turn on the 'Keep Warm' setting and add your half and half and kale and mix together. Close your lid and let the kale wilt and soften for about 10 minutes. Serve topped with parmesan cheese if that's how you like it and some garlic breadsticks if you want them. Enjoy!
It's been absolutely miserably snowy and cold here lately, which is half the reason T and I decided on a soup tonight. We've had several years of mild winters and I truly forgot that I lived in an area that is going to get snow on a regular basis. Luckily my company has most of the employees working from home (including myself) and I haven't really had to drive or even leave my house if I don't want too. I don't know about anyone else, but this time of the year makes me seriously consider moving to a state that doesn't have snow. I don't even mind the cold so much as I'd much rather not deal with snow. I hope everyone is staying home and safe (if it's snowing) and warm (if it's cold). Enjoy your soup!
