Creamy Chive Chicken

This is a HelloFresh recipe that I decided to remake. It’s amazing. You need this.


2 chicken breasts

1/4 cup chicken stock

2 tbsp sour cream

1 tsp Dijon mustard

To Make:

If you’re having rice as your side dish, start this first. It’ll take the longest to cook so you want this to be done at the same time. Next start your chicken. When I got my chicken, the breasts were super thick, so I cut them in half to make them smaller so they could cook quicker. You can cook your chicken any way you like, but I used a grill cast iron skillet. Season your chicken, I kept mine super simple and just used some freshly cracked pepper on mine and T added salt to his. Cook your chicken to an internal temperature of 165 degrees. Steam your broccoli. A few minutes before your chicken is finished, start your sauce. Chop your chives thinly then take your chicken stock and Dijon mustard and put them into a small pan and whisk together. Bring to a simmer and let it thicken a bit. Once the sauce is thickened, add your sour cream and bring to a simmer again. Squeeze a quarter of a lemon into the sauce. Remove the sauce from the heat and add in your chives. Serve your chicken and rice with the sauce poured on top and a little squeeze of lemon juice.


My life has been absolutely insane since March 1st. I started a new job, and have been having some issues getting a good work/life balance. When I get home I just want to sit down and do nothing, so I decided to try HelloFresh so I wouldn’t just order pizza every night. So far it’s totally working! I’ve gone from ordering 5 meals a week to 3, and I’ll be working on getting some recipes together to be posting twice a week going forward! This one stuck out and I was pretty determined to make it again (even after I threw away the card with all the ingredients on it). It’s amazing and I live for the sauce. It’s perfectly balanced and not super bad for you if you don’t go overboard with the sauce or then sides! Hope you enjoy!
