Chicken Parm

I made some sauce this weekend, so we made chicken parm! Enjoy!


2 thin chicken breasts

bread crumbs


2 eggs

mozzarella cheese

asiago cheese

parmesan cheese

spaghetti (or pasta of choice)

spaghetti sauce


To Make:

Preheat oven to 400 degrees. Pour flour into a container and season with Italian seasoning, basil, and garlic powder. Beat 2 eggs in a separate container. Pour some bread crumbs into a third container and season with the same seasonings. Bread your chicken by dredging in the flour, then in the egg, then in the bread crumbs and drop into a cast iron (or any kind) skillet with a thin layer of canola oil on the bottom. Fry for a few minutes until the breadcrumbs are brown then flip and do the same for the same side. When the chicken is done frying, place on a baking sheet lined with a rack to allow heat under the chicken. Shred your cheeses and mix them. Spoon some sauce on top of the chicken, I used my homemade sauce, but feel free to use whatever canned sauce you like. Add however much cheese on top as you like. Put the chicken into the preheated oven and bake for about 15-20 minutes or until the internal temp measures 165 degrees. While the chicken is in the oven prepare your pasta however you like. Serve your chicken with the pasta and some garlic bread if you’re feeling it and enjoy.


So my new job tends to have me completely and mentally exhausted by the end of the day, and I’d be lieing if I said I come home and have any desire to cook at the end of the day. Bad timing for starting a blog, but after about 3 1/2 weeks, I’m getting into a routine and can start cooking more often again. I’m excited to get back into blogging too, I didn’t realize how much I enjoyed it until I hadn’t made a post in a while. T and I are starting a vegetable garden this year, so I’m excited to have some fresh veggies to work with. Hope everyone enjoys this recipe!
