Chicken Broccoli Casserole

This is a new one for me, but it was so good!


Ingredients:

1-2lbs chicken breast, diced

broccoli florets

15oz frozen potatoes, thawed

1 can cheddar cheese soup

cheddar cheese

5oz evaporated milk

spices


To Make:

Preheat oven to 400 degrees. Combine all ingredients in a bowl and mix. Use your preferred amount of shredded cheese and broccoli. Season with your preferred seasonings, I used garlic powder, onion powder, smoke paprika, and pepper. Pour into a sprayed dish and cook for about 20-25 minutes. I cut my chicken into pretty small pieces so they were perfectly cooked after this amount of time and didn't need to cook it before I put it into the oven. If you want bigger pieces and would feel more comfortable cooking it a little prior to putting it in the casserole, feel free to do so.


Story:

So because I'm back in the office on a full time basis again, I wanted to make sure that I had a good, filling lunch all week. I did half the week with the kielbasa casserole, and the other half with this one. This is my first full week in the office in over a year (last week I was only in office 3 days), and I'm telling you, it's kicking my butt. I'm so glad I decided to get back into the habit of cooking and prepping meals at the beginning of the week because all I have to do when I get home in the evenings is cook the food and call it a day.
