Chicken and Bow Tie Pasta

Here's our recipe for today! This is another one I tried from NutritionalSarah (from TikTok, look her up, she's fun).


3 chicken breasts


2 eggs

panko breadcrumbs

1 lb bow tie pasta

1/2 onion


2 tbsp tomato paste

half and half

parmesan cheese


To Make:

Bread your chicken (flour then eggs then breadcrumbs) and cook in a skillet over medium heat until internal temperature reaches 165 degrees. In my kitchen we check internal temps for chicken always, but your kitchen, your rules so do what you want. While the chicken is cooking make your pasta, I used bow tie pasta because it's what I had in the kitchen but obviously use what you like. Once chicken is cooked set it aside and keep it warm. In that skillet pour a little oil into the bottom and cook the onion until translucent. Add in garlic, use as much or as little as you like. Add in the tomato paste and cook in down a bit, I also added in a couple handfuls of kale and wilted it down since I had some leftovers. Pour in about a cup of half and half and as much parmesan cheese as you prefer. Stir in your cooked pasta and serve with the chicken over the pasta or on the side.


Sorry I've been so MIA over the last week. I had a goal of making a daily post when I started this blog, but life got ahead of me and I got wrapped up. I can finally announce that I accepted a new position with my company and because of that I went from working from home daily, to needing to be in the office daily again. I've also been working to ensure that all my current projects are wrapped up as much as possible before I start the new position on the 1st of March, so even when I come home from work this week, I've been making a list of things I need to make sure are done the next day in the office. My plan for this blog is to work on weekends to ensure that all posts are written and ready to go for the week so that we don't miss any time again. I'm excited to see where life is going to take me this year, and yes I'm aware that my optimism is about a month late for the new year, but I didn't think anything exciting was going to happen this year aside from maybe the pandemic getting under some amount of control.
