We wanted to try something different for us so we took a favorite and used different seasonings. Give it a try!
2 thin chicken breasts
2 servings whole wheat pasta
slap Ya mama seasoning
1 cup heavy whipping cream
2 tbsp butter
1/4 cup italian cheese
Fill a pot with water and set it to boil. Pour about 2tbsp olive oil into bottom of a cast iron skillet and heat it up over medium high heat. While your skillet is heating, pat your chicken dry and cover both sides with some slap ya mama Cajun seasoning. When the oil is hot, place the chicken into the skillet and leave it alone for about 5 minutes. By now your water should be boiling, put your pasta in, I used thin spaghetti. Flip your chicken after 5 minutes and leave it alone again for another 5 minutes. If you’re going to make a vegetable, now is your time to start it. I like to make the steam able bags of broccoli. Remove your cast iron skillet from the heat, and drain your pasta. Leave the chicken in the skillet, it’ll continue to cook and be perfectly juicy and tender. Use the same pot you used for your pasta and dump in 2tbsp butter and let it melt over medium heat. When it’s melted pour in 1 cup of heavy whipping cream. Stir together and let sit until it starts to simmer. When it starts simmering take it off the heat and sprinkle in a bit more slap ya mama and 1/4 cup cheese. I like to use the Kraft 5-cheese blend if I’m feeling lazy, or use Asiago, parm, or mozzarella if I’m not. Mix everything well so the cheese melts and doesn’t just stick to the bottom of the pan. Pour your pasta in and mix it all together. Serve your dinner.
I’ve been lacking on eating at home lately, Ive just been incredibly lazy and I know I need to stop it. So I got some new seasonings (new to me) and I’m trying to mix it up with some of my old favorites. This was what ended up happening tonight, I wanted alfredo and decided to try out my seasoning and dang it was good. We’re also working on portions in this house. We both eat entirely too much and we’re trying to fix that. I know that plate isn’t ideally portioned, but I’m happy that I had more veggies than pasta and a good serving of protein. Enjoy!
