Buffalo Chicken Pasta

Saw someone making this on TikTok and decided to put my own spin on it!


1lb chicken, cubed

1lb penne, we used whole wheat

franks red hot sauce

ranch, we used lite ranch

1/2 sweet onion, diced

minced garlic

mozzarella cheese


To Make:

Fill a large pot with water and start heating it up to boil. Once boiling add in your penne. In the meantime, drizzle some olive oil into a skillet, I used my cast iron, and put your chicken in over medium high heat. Season to your liking with garlic powder, onion powder, pepper, paprika (I used smoked), and salt if you need/want it (I don’t cook with salt so I didn’t). Cook your chicken until done and then add in some minced garlic, as much as you want, and the onion. Cook an additional 2-3 minutes. By now your penne should be done and you can drain it. Combine the chicken and penne and add in at least half a cup of franks red hot, more if you like it a bit spicier, and half a cup of ranch dressing. Mix together and then add in some mozzarella cheese and mix again. Serve with a sprinkling of mozzarella cheese on top.


Its been such a gorgeous first weekend of May. T and I relaxed last evening next to the fire pit and did errands today. I wanted something quick and easy for dinner tonight and this ended up being exactly that. It took us maybe 30 minutes, from start to finish, to make this and it made a huge pot, enough for both of us to have two bowls and have some left over. This is definitely the dish to make if you like Buffalo chicken dip and want to get that flavor without making a big batch! Hope everyone enjoys!
