This was so fast and easy to make and it tasted amazing!
2 Roma tomatoes
Garlic, we used 1 large clove
Fresh basil, to taste
2 chicken breasts
8oz thin spaghetti
Balsamic glaze, optional
Start some water to boil. Decide how you want to cook your chicken and get that started as well. We seasoned ours with garlic powder and Italian seasoning then grilled it.
Dice your tomatoes and mince your garlic. Combine in a bowl. Rough chop your basil and put it into the bowl as well. Season with salt and pepper to taste. Sprinkle balsamic vinegar onto your tomato’s and mix together.
Finish your chicken and pasta. Drain your pasta and drizzle some olive oil onto it. Season with salt and pepper.
When your chicken is done, top your pasta with your chicken then top that with your bruschetta. Drizzle some balsamic glaze on top if you want. I sprinkled some freshly grated Parmesan cheese on top as well, but that’s totally optional.
Serve with some garlic bread and enjoy! This is light, refreshing, and fills you up! It’s so good and worth it!
