Broccoli Cheddar Soup

We wanted something fast, filling, and yummy and this checked every box!


1/4 onion, diced

2 tbsp unsalted butter

2 tbsp whole wheat flour

1 cup low sodium chicken broth

1 cup half and half

2 cups broccoli florets

4 oz shredded cheddar cheese

seasonings to your liking

To Make:

Melt your butter in a small dutch oven over medium high heat. Add in your diced onion and cook until tender. Pour in your chicken stock and broccoli. Season with your favorites, we used garlic powder and smoked paprika. Cover and let simmer until the broccoli is cooked to your liking. We let it simmer for about 10 minutes, but we like our broccoli to still have a bit of crunchiness to it, so cook yours longer if you want. Add in your half and half and cheese. Mix together until the cheese is melted. Serve with breadsticks, garlic bread, crusty bread, whatever. We were lazy and grabbed some crazy bread from little Cesar’s and used that. Garnish with some crushed red pepper and fresh cracked pepper.


It was an insanely busy week last week, then a busy weekend. I had my work Halloween party and spent the evenings getting the decorations ready for it, then we went to a Halloween party at a local art studio/hangout area. After our party we went back to my best friends house, turned off the breakers for all the lights in the house, and played hide and seek like true adults. It was honestly a blast. It’s starting to get cold, and I’m not about it. I hate the cold, I hate being cold. This is about to be a miserable winter. 😅
