T and I love this breakfast! It’s relatively hands off, tastes amazing, and we can make it while we’re waking up and making coffee. Enjoy!
Ingredients (for two people):
8oz thick cut bacon
toppings if you want
Preheat your oven to 400 degrees. While it’s preheating, dice your potatoes into slightly smaller than bite size pieces. Spray a baking sheet with olive oil, or line it with parchment paper if you don’t want to do dishes. Add your diced potatoes and seasoning with your favorite seasonings. We typically use pepper, smoked paprika, garlic powder, and onion powder, mix your potatoes to cover with your seasonings. Put your sheet with your potatoes into the oven and bake for about 15 minutes. They don’t need to be completely done, you’ll keep baking it. While the potatoes are baking, cut your bacon into bite size pieces. Add the bacon and bake for another 10-15 minutes depending on your preference of doneness of bacon. When the potatoes and bacon are done to your liking, pile them into 2 piles and create a little dent. Crack an egg into the dent. If you want a cheese topping, add it now as well. We normally use pepper Jack cheese, but we didn’t have any the day I took the picture. Bake 8-10 minutes until your eggs are done to your liking. Enjoy!
