Beyond Burgers and Mac n Cheese

I really wanted mac n cheese, so I made some with some beyond burgers! Enjoy!



Ingredients:

12oz Beyond ground meat

1/4 cup plain breadcrumbs

8oz elbow pasta

mozzarella cheese

cheddar cheese

colby jack cheese

american cheese

cream cheese

spices


To Make:

Preheat oven to 400 degrees. Make pasta according to package, I typically use Banza chickpea pasta but have used whole wheat or regular elbows and it's always amazing. Shred your cheeses. I used about 4oz of each cheese, and then took a few small dallops of cream cheese and mixed it all together, I almost never follow any kind of measurement when it comes to spices and cheese, so if you want it super cheesy add more! Season your mixed shredded cheeses with garlic powder, onion powder, smoked paprika, pepper, and the TINIEST amount of ground mustard. Drain your pasta and run under cold water to stop the cooking process. Mix the cooled pasta with the shredded cheeses and pour into a greased oven safe dish. Bake for about 20-25 minutes or until the top looks a little golden or done to your likeness. While the mac n cheese is baking, make your burgers. Heat a cast iron skillet on medium high heat with a little olive oil in the bottom. I used beyond meat because it's what I had on hand and I like it equally as much as regular beef, if you only have beef you'll need an egg as a binding agent. Mix the breadcrumbs, meat (or meat substitute), garlic powder, onion powder, smoked paprika, pepper, and I have a hamburger mix that I got at Kroger that I always mix in too. I made 2 6oz burgers, but if you want smaller, feel free to make 4 4oz or however you want. Put them into your preheated skillet and cook to your preferred doneness. Serve with your mac n cheese and a pickle and enjoy!


Story:

Today was the first really nice day of the year, so of course I just wanted to be outside. I have an amazing coach at the gym and when I walked in and told him I wanted to walk in the rain because it was so warm, he encouraged me to skip my workout today (with the intention that I'll do it tomorrow) and take a beat and walk in the rain if it's what was going to make me happy. So that's exactly what I did. I texted T and asked him to come walk in the rain with me and off we went. I told him I was craving mac n cheese and he said "well lets make some" so we did. I don't really have much more going on right now, I just feel so glad to have people in my life that encourage me to practice self-care and manage my mental health as much as they encourage me to manage my physical health. It's so amazing and I can't express how much it means to me.
