Amped Up Tacos

This is one of my favorite quick weeknight meals! Give it a try!


1lb ground turkey or lean ground beef

8oz tomato sauce

1/2 onion, diced

2 cloves garlic, minced

1 jalapeño, diced

1 chipotle pepper in adobo sauce

1tbsp adobo sauce

Taco shells of choice

spices (Chile powder, chipotle powder)

To Make:

Pour some olive oil into a cast iron skillet, or non-stick if that’s what you prefer. Throw your diced onion into the pan when it warms up and cook until translucent. Add garlic and cook until fragrant, maybe 1-2 minutes. Add in your diced jalapeño and sauté until bright green. Put into a bowl on the side and pour in a little more olive oil into the same skillet. Throw your ground beef or turkey, both taste amazing so it doesn’t matter. Cook through and then season with chipotle powder, chile powder, and if you’re feeling daring a little ancho chile powder. Dice up your chipotle pepper and dump into the ground beef. Take 1tbsp of the adobo sauce from the can of chipotle peppers and pour in along with the tomato sauce. Mix in the onion, garlic, jalapeño mixture and let simmer until most of the liquid is cooked off. Serve with crunchy taco shells, soft taco shells, on a salad, over nachos, the options are endless! I like to have crunchy tacos with a little sprinkle of cheese, salsa is definitely optional as this meat has some serious flavor!


I decided that I wanted to start meal planning again and I knew I wanted something that I enjoyed the leftovers of because on days that I work and go to the gym I have zero desire to cook so I need something I can heat and eat. This is one of those things that the longer it sits in its own juices, the better it tastes, so I genuinely enjoy eating these leftovers. I’ve made this for t before and he enjoyed it then and enjoyed it this time again too. I definitely think everyone should try this taco meat!
